CIT ICON dinner serves up Chef George Calombaris

On Wednesday 12 November CIT Tourism and Hotel Management Centre will come alive as part of the last ICON dinner for 2008. Previous ICON guests have been introduced to food from both international and domestic chefs and this month's offering from George Calombaris is sure to please.

'From a young age, I was fascinated with food' George says. A combination of being a quick learner with a creative flair is his trademark even today. Quoted as being "very out there", George's food has seen him become a much talked about chef in the international cooking circuit.

George completed his apprenticeship at the Hotel Sofitel, and soon found himself leading a team of 11 qualified and apprentice chefs at Richmond's Fenix Restaurant later honoured in 2001as Restaurant of the Year as part of Melbourne's Food and Wine Festival.

In 2003, George was selected to represent Australia at the Bocuse d'Or International culinary grand prix in Lyon where he achieved the best ever result for an Australian representative. In the same year George was voted as one of the top 40 chefs of influence in the world by the Global Food and Wine Magazine.

In 2006 George opened his flagship venue The Press Club Restaurant and Bar in Melbourne and further cemented his place as a culinary star. The food based on traditional Greek food from George's youth, contains the modern twists which have made George famous. "I don't follow recipes, I cook from the heart. It isn't about structured formats, it's about passion, love and dedication, but ultimately food is celebration that brings people together." George says.

Chef George is notoriously well-known for pushing culinary boundaries in his previous restaurant positions as well as his public persona on "Ready Steady Cook". George's larger than life personality makes him one of the most popular chefs and CIT looks forward to this personality radiating from the kitchen on Wednesday night.
